BOISE, ID, December 22, 2004 - Need some fresh new potato ideas for Potato Lover's Month in February? Never fear, the Idaho Potato Commission's accordion fold recipe cards are now available. With six new tantalizing takes on the classic potato, planning an innovative menu to kick off the month-long festivities will be simple as an Idaho® Potato Torte.
A useful tool for every foodservice professional, the new "meat and potato" themed recipe cards feature avant-garde ways to dress up America's best-loved potato. And while the recipes are the signature dishes of named chefs, they offer the perfect inspiration for your own potato creations. What's more, each recipe includes specific (and simple) instructions, as well as detailed nutritional analysis.
"These recipes merely scratch the surface of what's possible when creative minds meet Idaho Potatoes," says Don Odiorne, Vice President of Foodservice for the IPC. "What better way to please diners than serving up potato dishes that capture Americans' taste for flavor?"
Take Chefs Michael and Wendy Jordan of Rosemary's Restaurant in Las Vegas who studded Mashed Idaho® Potatoes with Kalamata Olives and chives, along with a helping of low fat yogurt for a burst of flavor. In addition to the Jordans, the following chefs and recipes are featured in the brochure: Wade Fortin, The Galway Arms (Cheesy Ale & Cheddar Colcannon); Bill Telepan, JUdson Grill (Celery Root Idaho® Potato Pancakes); Martin Hamann, Fountain Restaurant (Idaho® Potato & Mushroom Hash); Roberto Donna, Galileo (Idaho® Potato Torte); and Robert Price, Buckeye Roadhouse (Buckeye Twice-Baked Idaho® Torte).

Although Idaho is famous worldwide for its premium potatoes, some consumers don't realize that only potatoes grown in the Gem State can wear the "Grown in Idaho" Seal. Both words Idaho® Potatoes and the "Grown in Idaho®" seal are federally registered Certification Marks that certify to consumers that they are purchasing genuine Idaho Potatoes that have been grown in the state of Idaho.

Established in 1937, the Idaho Potato Commission (IPC) is a state agency that is responsible for promoting and protecting the famous "Grown in Idaho®" seal, a federally registered trademark that assures consumers they are purchasing genuine, top-quality Idaho® potatoes. Idaho's ideal growing conditions, including rich, volcanic soil, climate and irrigation differentiate Idaho® potatoes from potatoes grown in other states.
