La Fuji Mama’s Coconut Lime Potatoes Anna Comes Out on Top in Idaho® Potato Side Dish Challenge

Meals On Wheels Program in Orem, Utah Receives $5,000 Donation

EAGLE, Idaho, May 9, 2014—The fans voted and the results are in! The winner of the Idaho Potato Commission’s (IPC) first-ever Virtual Side Dish Challenge is Rachael Hutchings of the popular food blog, La Fuji Mama. As a resident of Lehi, Utah, Hutchings and her winning recipe for Coconut Lime Idaho® Potatoes Anna earned a $5,000 donation for her local Meals On Wheels program of the Mountainland Association of Governments in Orem. The donation will provide several hundred meals to homebound seniors in the region.

Coconut Lime Idaho® Potatoes Anna is a unique twist on a classic French dish that Hutchings says was partially inspired by the song “Coconut” by Harry Nilsson. The recipe was among six in the IPC’s Virtual Side Dish Challenge, which launched earlier this year and challenged bloggers from across the country to each create a tantalizing new Idaho® potato recipe to vie for votes.

“I was delighted to learn that my recipe received the most votes – the donation to my local Meals On Wheels program was the best part,” said Rachael Hutchings. “I’d like to thank the Idaho Potato Commission for the opportunity for me to give back to my community in such an impactful way.”
