Omaha Steaks did a great job a few years ago, marketing whole cooked Idaho potatoes as a side dish offering. They achieved this by allowing the potatoes to cool, then using a vacuum packaging unit (such as Cryovac) to preserve the desired quantities/volume. This is an effective way of removing excess air, and these systems typically use heavy-duty wrapping that extends shelf life and helps prevent freezer burn.
