Trying New Dishes with Idaho® Fingerling Potatoes

Can you give me anything “new” to try with Idaho® Fingerling potatoes besides roasting or putting in a potato salad?
A:
The recipe below is one of my favorite appetizer recipes; it is zesty with a great chorizo and earthy potato flavor.
If you want to save time in the preparation, just cut the potatoes in half lengthwise and top with the filling. Either way it is sure to be a hit. We served this at the IACP conference of culinary professionals one year and it was a big hit.
