How Do I Keep Potatoes from Sprouting at Home?

Q:

How do I keep the potatoes from sprouting and going soft?

A:

Potatoes will naturally sprout after being harvested in about 120-150 days. Idaho potato growers have found ways to store the potatoes in ideal temperatures, just above 40°F, with high humidity. They also use sprout inhibiting methods and technology to extend the life of the potato for up to a year.

At home you usually don’t have those options. Here are a few links with some tips.
