Did You Know A Potato Can Heal Itself After Harvest? Potatoes harvested in the fall in Idaho typically go right from the field into storage. While the time varies with the temperature of the storage, in about two weeks the potatoes outer skin can scar or heal. Typically, the air checking or cracks that you saw occur when the potatoes go from a cold or cool storage immediately into a warmer climate, such as taking potatoes out of refrigeration to put on display on a room temp area in a grocery store. The potatoes are still safe to eat, just not as attractive as ones without these cuts that look like someone squeezed the potato with sharp fingernails.
