Is it ok to eat potatoes that have sprouted?
The sprouts taste bitter, just knock them off if they are small and bake or use as usual. Sometimes the emerging sprouts are referred to as “peepers” coming out. However, when they get this far along (see below picture), either plant them or throw them away.
Potatoes are probably the lowest price per pound in the whole produce section, so just buy more. Make sure the next time you store in a cool dark place.
