Can you add sugar and salt to water if you are brining fries?

You can, and some processors and operators swear by their prep, brine recipes. However, it is not necessary to brine at all. Simply store refrigerated, cut raw fries in clean, cold water with one tablespoon of citric acid per gallon  (lemon juice or vinegar) up to 24 hours before needed to help prevent discoloration.
