These thin, crispy crackers are the perfect after-school snack. They have an addictive peanut butter flavor and some sunflower seeds thrown in for extra crunch! This is also a great recipe if you're wondering what to do what that little bit of leftover mashed potatoes.
1 medium-sized Idaho® potato
½ teaspoon table salt
½ cup unsweetened creamy peanut butter
1 tablespoon brown sugar
½ cup shelled sunflower seeds
Coarse salt, to taste
Yield: About 20 crackers
