I created this recipe many years ago because we all love savory pies, why not savory strudel? It gives me a chance to practice my strudel chops, and is a high-satisfaction vegetarian appetizer, or entree when combined with a salad or some roasted mushrooms.
Like many of my potato recipes, Idaho potatoes are a must for this strudel because they combine ideal high-starch, low-moisture characteristics with robust potato flavor. No other potato gives you that fluffy texture that is advantageous for so many preparations.
Established in 1937, the Idaho Potato Commission (IPC) is a state agency that is responsible for promoting and protecting the famous "Grown in Idaho®" seal, a federally registered trademark that assures consumers they are purchasing genuine, top-quality Idaho® potatoes. Idaho's ideal growing conditions, including rich, volcanic soil, climate and irrigation differentiate Idaho® potatoes from potatoes grown in other states.
