Attention to Detail Makes these Potatoes Magical.

My first steps towards a career in culinary took place in a pizza shop. Even though I was just 16 years old, I knew it was far from ideal. Knowing a more structured cooking environment would be helpful, I took on a three year apprenticeship, learning classic French techniques and earning my stripes as a chef. Subsequent experiences helped me hone my skills and elevate my craft.

At the Corvino Supper Club & Tasting Room, our food is definitely American but also multi-cultural, providing an exceptional dining experience in a relaxed, midwestern setting. Considering our use of locally sourced ingredients including paw paw and black walnuts, we create a sense of place that is very Kansas City.

Idaho® potatoes are a mainstay ingredient in our pantry and something we rely upon each and every day. For our Corvino House Fries, the recipe is definitely fussy. That being said, there's something about Idaho® Russets, perhaps its their sugar and starch content, that makes them ideal. When cooked in water and vinegar followed by the process of double frying, these potatoes are magical.

I also love potato skins. Instead of throwing them away, we roast and dehydrate them, then make a powder infused with salt that can be sprinkled on the potatoes right out of the fryer.

In our fine dining environment, we do things that others don't. Everything is labor intensive, attention to detail is paramount, and our dishes are exceptionally well balanced. That being said, it would be great to open a brew pub. The foods would be simpler, more accessible and approachable.

The Corvino Supper Club & Tasting Room was recognized in 2017 as Food & Wine Magazine's Most Exciting Restaurant Openings, Thrillist's Best New Restaurant, and Eater's 15 Most Beautiful Restaurants and has received the AAA Four Diamond Award in 2017, 2018 and 2019.
