I started working in a restaurant five days a week at the age
of 16 in New Orleans, where I was born and raised. I came up the traditional way but faster. I moved to Miami, and a chef I was working with received an offer in Chicago. He asked me to come with him. I was not prepared for the position, but with self- discipline and self-teaching I was able to make it better each day. My cooking style reflects the heart and soul of Southern food, with its different cultural influences. That’s my core.
