  1. Keep them cool – Store at 45–50°F (7–10°C). Avoid the fridge, as cold temperatures turn starches into sugar.
  2. Store in the dark – Light causes sprouting and greening. Use a paper bag, cardboard box, or a dark pantry.
  3. Ensure good airflow – Use a breathable container like a mesh bag or basket, not plastic bags.
  4. Keep them dry – Moisture leads to rot. Store in a dry place and don’t wash until ready to use.
  5. Separate from onions & fruit – Onions, apples, and bananas release ethylene gas, which speeds up sprouting.
  6. Use a sprout inhibitor – Some people place a small apple with the potatoes to slow sprouting, but too much exposure can backfire.
  7. Check regularly – Remove any sprouted or soft potatoes to keep the rest fresh longer.
