I boiled whole potatoes with the skin on and left them in the water overnight, unrefrigerated. Are they still safe to eat?

Answer

Unfortunately, they aren’t safe to eat. Cooked potatoes left out overnight in the water they were boiled in can enter the "danger zone" (40–140°F) where bacteria like Clostridium botulinum and others thrive. This can happen within 2 hours of being left out. Even if they smell and look fine, the risk of bacterial contamination is high.

For safety, always refrigerate cooked potatoes (or any cooked food) within 2 hours of cooking. If they’ve been left out, it’s better to discard them.
