What do I do with my leftover Thanksgiving mashed potatoes?
Like Cinderella, leftover mashed potatoes must be used within a tight time frame. (No, not midnight). Rather, within two or three days. Keep leftovers covered and refrigerated until ready to use.
Leftover mashed potatoes can be reheated using any method (stovetop over medium heat, or in the oven at 350 F for 20-30 minutes. Expect less time reheating in the microwave using the medium to high-power setting).
Depending on the quantity, reheating time will vary. Depending on the texture (such as if the potatoes are starting to dry out) add a little warmed-up stock, milk and/or butter to taste.
Stovetop and oven, stir occasionally until thoroughly heated. Microwave reheating - allow for more frequent stirring. Reheat uncovered to release moisture, or heat covered to retain.
Don’t limit yourself to ‘just’ an encore of mashed potatoes (although these are pretty yummy... Try folding in fresh-diced peppers, onions, and grated cheese to seasoned leftovers to form 1” potato pancakes, and heat until slightly crisp in a lightly-oiled skillet to enjoy with your post-Thanksgiving breakfast.
