Why Does Oil Come Out Of Potato Salad?

Why does oil come out of potato salad? Is it the type of mayo you use or is it because of the temperature of the potatoes?

A:

If the mayo is added while the potatoes are still warm a lot of the oil in the mayo will be absorbed, but you probably will have to adjust to taste and add more. Cooling the potatoes then adding the mayo works best. The Kraft mayo ingredients list shows soybean oil first.
