Where can I get them and what is there name. I am frustrated because I can't find the right potato to make my favorite potato salad. Please help me find the right potato for my potato salad.
When potatoes stored at 40 degrees F or colder, the starch will convert to sugar. That's the cause of the sweetness. The Russet Burbank, when used for potato salad is best if cut into chunks rather than boiled whole. That will keep the potato salad from turning into mush.
