NO! This is the wrong way to do it and is not food safe. Cooked starch foods like potatoes can grow germs if not kept either refrigerated and cold or hot over 140º F. Bake or boil the potatoes for potato salad, then cool. Refrigerate. One example is to put the potatoes in the refrigerator with no cover on the container to cool quickly. By the way, it’s a good idea to do things like this to cool all hot foods. Then use cold ingredients to make the potato salad.
