How Can I Keep Potatoes Warm Without Drying Them Out?

I am trying to find out how I can keep my potatoes warm without drying out or over cooking the potato. I plan on using a convection oven and I wonder if it can be used as a warmer to keep the potatoes warm during the slower times of the restaurant?

A:

The convection oven can keep them warm, but you might need the oven for other items that need to be baked during the meal times.

The best way I have found to keep potatoes warm is the under counter bread warmers like Wendy’s uses. They bake off in batches and use the warmers to have potatoes at the ready for customer orders. Unfortunately dry heat is going to take a lot of the moisture out of the potatoes…
