Lobster, Corn and Scallion Idaho® Potato Salad
Ingredients:
- 4 Idaho® potatoes, washed, baked, peeled and cut into 3/4 inch cubes
- 1/2 pound lobster meat, cooked
- 4 ounces corn, roasted and cut off the cob
- 2 ounces bleu cheese, crumbled
- 2 ounces scallions, sliced
- 1/2 cup sour cream
- 1 cup mayonnaise
- 1/2 cup crème fraiche
- 1/2 ounce lemon juice
- 1 tablespoon dill
- 2 tablespoons basil
- 1 tablespoon whole grain mustard
- 1 teaspoon ancho chile powder
- To taste salt and black pepper
Directions:
- In a bowl prepare the dressing by mixing the sour cream, crème fraiche, mayonnaise, blue cheese, lemon juice, dill, basil, whole grain mustard, Ancho powder, salt and black pepper.
- Fold in potatoes, lobster, corn, scallions and adjust seasoning as needed.
