Sweet and savory, this luscious Maple Bacon Idaho® Potato Pie is a home run when you’re looking for an indulgent treat to sink your fork into. A tasty filling made with Idaho® potatoes, light brown sugar, maple syrup, eggs, butter, heavy whipping cream and salt is poured into a flaky crust and topped with a rich bacon and pecan crumble. Idaho® potatoes give this pie a thick yet silky texture; we won’t be surprised if you skip dinner all together and go straight to dessert! Short on time? A pre-made frozen pie crust will work just as well. Pro Tip: After boiling the potatoes until they are “fork tender” make sure to let them cool before you peel the skins and mash them in a food processor. If you don’t have a food processor on hand, you can also use a mixer or the pulse setting on a blender.
