Make these unforgettable Idaho® Potato Truffle Fries with Parmesan that are great as a snack or side dish. Either baked or deep fried, these mouthwatering spuds are a breeze to prepare and are sure to be devoured the minute they’re plated. Here’s a tip from the pros: Prep the cut potatoes by soaking them in water; this removes excess starch and guarantees fries that are crispy on the outside and light and fluffy on the inside. Featured Farmer: Mitchell Searle
This month’s featured Idaho® potato farmer is Mitchell Searle from Burley, Idaho. Mitchell and his wife Sunny have four children -- Lydia, David, Dawson and Natalie. Mitchell comes from a long line of farmers and loves that he is able to grow a crop that feeds his family and the world. His favorite dish is mashed potatoes with gravy, roast beef and corn.

Q: Do some varieties of potatoes have a different starch content than others?
A: Yes! Varieties like Idaho® russet potatoes for example, have a high starch content. As for colored varieties (e.g., reds, long whites, yellow types), these ‘waxy’ types of potatoes tend to have a lower starch content. Idaho® red potatoes are ideal for salads, skin-on roasted or mashed potato dishes, while an Idaho® russet is great for baked potatoes and crispy french fries.
