Idaho American Aligot Potatoes

Learn how to make one of our easiest, most delicious, and most popular recipes, Aligot Potatoes! Add water, salt, and potatoes to a large pot and bring to a boil until taters can be easily pierced with a knife. Drain the spuds thoroughly of all water and steam, then rice into a heated mixing bowl. Heat butter, cream cheese, and milk in a separate pot then slowly combine with riced potatoes. Whip for three minutes then fold in shredded mozzarella and white cheddar. The shredded cheese should soften after two minutes, at which point it's ready to stretch, serve, and enjoy!

Ask Dr. Potato

Q: How Do I Store Potatoes Without Having Them Sprout?

A: It’s best to store potatoes as-is from the bag you purchased them in. Keep in a cool (not cold) dark and dry area, such as in a pantry or cupboard. Use within a month or so, as potatoes will continue to dehydrate, and sprout and are subject to skin greening. Before using, rinse the potatoes with clean water and prepare as desired.
