Boo! You Can’t Disguise the Goodness of Idaho® Potatoes 


You’ll have no problem getting the kids to stop and eat something healthy before they go trick-or-treating when you prepare Spooky Skull Pot Pies. The best part about this recipe is that you can change it up to meet your family’s needs: make individual pies or one large one; save time by using pre-made dough; use your favorite frozen veggies or add a little protein like rotisserie chicken or browned hamburger meat. The IPC’s entire Halloween recipe collection is as frighteningly delicious as these pot pies.

Fresh Crop of Potatoes Heading to You!

September is an exciting time in Southeast Idaho. It’s where close to one-third of all potatoes in the U.S. are harvested in about a six-week period. We’re talking 13 BILLION pounds of potatoes! Thousands of full-time and seasonally employed men women and even kids all pitch in to unearth the spuds before the weather gets too cold. Equipment like windrows, combine harvesters and spinners are used to harvest the spuds, which are loaded into massive climate-controlled storage sheds that are built to mimic the potatoes’ growing environment – essentially keeping them asleep until needed.

Meet The Growers Who Bring Farm To Table 

 
Dan Moss and his wife Jann grew up in Northern Utah. They had a small farm where they grew beets, potatoes, peas and beans. They realized it would be hard to expand their farm due to residential pressure so they moved to Idaho where there was plenty of land and opportunity. That was 40 years ago! Dan and Jann have four children, eleven grandchildren and five great-grandchildren. Their son Ryan runs the day-to-day operations while Dan and Jann try to slow down a little!

Farm Babe - Myth Busters on Potato Storage 

Michelle, AKA the “Farm Babe” is a reformed city girl who had bad information and even worse food beliefs. A self-proclaimed ag evangelist Michelle happily partnered with the Idaho Potato Commission to help set the record straight on a few potato myths while sharing tips, unbiased facts and a little bit of wit.

Q: Does the freshness of a potato matter? Specifically, does a "just-harvested" potato have any better qualities than say a properly stored one-month-old potato?

A: Potatoes that are freshly harvested or have been stored long-term in a temperature-controlled environment will perform the same. You probably won’t even see or taste a difference. However the aging process for anything living is unavoidable. When a potato ages it begins to lose water content and dehydrate. But there are few, if any differences, in performance and flavor.
