Q: What do I do with leftover Thanksgiving Mashed Potatoes?
A: Leftover mashed potatoes that are stored in an air-tight container can last in the refrigerator for up to three days and can be reheated using any method. On the stovetop use medium heat, and in the oven bake at 350° F for 20-30 minutes. Stir regularly and add a little warmed-up stock, milk and/or butter to taste and to keep the spuds from drying out. Reheating time will vary based on the quantity of mashed potatoes.
Expect less time reheating in the microwave; be sure to change the setting to medium to high-power and stir more frequently.
Don’t limit yourself to ‘just’ an encore of mashed potatoes. Try folding in fresh-diced peppers, onions and grated cheese or seasoned leftovers to form potato pancakes.
