RODS: Racing for Orphans with
Down Syndrome

The Idaho Potato Commission (IPC) is a proud sponsor of RODS, a nonprofit organization with more than 200 dedicated runner/triathlete members from around the world who race for a purpose --raising funds to find homes in the U.S. for orphans in other countries with Down syndrome. RODS is currently celebrating a HUGE milestone. They’ve raised enough funds to find loving homes for 30 orphans. As part of its ongoing support for RODS, the IPC will air a commercial about RODS during three nationally televised endurance races -- the Ironman World Championship (October 14, 2017), Boston Marathon (April 16, 2018) and the Amgen Tour (May 9, 2018). Ask Dr. Potato:  Can I prepare mashed potatoes 10 days in advance, freeze and then reheat them in the oven for my Thanksgiving dinner?

A: Yes, you can make and freeze mashed potatoes for later use. We suggest cooking the potatoes fully and adding lemon juice or wine vinegar to the water to help keep the potatoes from oxidizing. We highly recommend adding only the spices themselves to the make-ahead mashed potatoes. It’s very important to refrigerate the mashed potatoes until cool and remove all air from the bag before freezing to ensure the potatoes keep their freshness!

On the day you serve them, defrost the frozen taters in the microwave and add heated milk, cream or butter just before serving. If you add the milk prior to freezing there is a possibility it will curdle. This trick is a great way to ensure your make-ahead spuds are delicious! Enjoy!
