It’s Our Favorite Time of Year … Potato Salad Season!

Now that we’re on the cusp of potato salad season, master this sunny-time staple, Easy Traditional Idaho® Potato Salad to keep mouths fed and bellies happy. Roughly chop your potatoes and place into boiling water until fork tender. Combine mayonnaise, apple cider vinegar, salt and pepper in a bowl and drizzle over potatoes. Add eggs, celery, celery seeds and scallions and mix to perfection. Feel free to dig in, but for an Instagram-ready photo, sprinkle chopped parsley, dill, or chives for extra flavor and color.

Q: How Do You Keep Potato Salad From Getting Watery Or Soggy?

A: The most common reason potato salads become watery is because of the type of potato used. Red or yellow (Yukon) potatoes tend to have a lower solids content even though both have excellent potato salad qualities. Try using a russet variety next time to compare and contrast, as these have consistently a higher solids/lower moisture content.
