Ask Dr. Potato

Q: How do potato growers store their potatoes? Can I duplicate this?

A: If you’re making French fries, you may want to store your potatoes at 55 degrees F. Otherwise, keep the temps between 45-48 degrees F and cover the potatoes in a dark area.
