The Famous Idaho® Potato Tour is in full swing! Ask Dr. Potato: Can I freeze leftover potato salad?
A: You can freeze just about anything! The real question is, can you freeze potato salad successfully? Mayonnaise doesn’t freeze well. The same goes for celery and eggs. Additionally, the potatoes will discolor as a result of the mayonnaise. So, I wouldn’t suggest it. And from a food safety standpoint, once the dairy is mixed with the potato it is best to consume it immediately or at the very latest, the next day. However, if you realize you’ve cooked too many potatoes for the salad, you might try freezing the extra boiled potato chunks to use in a salad or as home fries at a later date. To get rid of excess moisture I spin the potatoes in a salad spinner before putting them into plastic food bags to store in the freezer.
