Instant Pot Idaho® Potato Leek Soup

Whoever says spring isn’t soup season has never tried Instant Pot Idaho® Potato Leek Soup! Set your instant pot to sauté and cook chopped bacon for 10 minutes. Remove most of the crispy bits but leave about two tablespoons to brown your chopped leeks before stirring in diced potato, chicken broth, thyme, salt, and pepper. Cover the mixture and set to broth/soup mode for 10 minutes. Add your crispy bacon bits atop with fresh parsley and enjoy while it’s still hot!

Q: How Do You Keep Your Potato Salad From Becoming Watery Or Soggy?

A: Chances are that an overly moist potato salad may originate from using potatoes with a lower solids content such as yellow (Yukon) or red types. While both have excellent potato salad qualities, they are sometimes prone to having a higher moisture content. Try using a russet variety next time to compare and contrast, as these have consistently a higher solids/lower moisture content.
