Featured Farmer: Craig Searle

This month’s featured Idaho potato farmer is Craig Searle. From Burley, Idaho, Craig is the fourth generation running the Searle farm. He is a proud farmer, keeping the family trade going because he loves feeding his family and the world with potatoes. Speaking of family, his sons are also potato farmers, serving as the fifth Searle generation working on the farm. Craig enjoys all forms of potatoes; his favorites include mashed potatoes, hash browns, and tater tots.

Vegan Deviled Idaho® Red Potatoes

Deviled eggs are one of the most popular picnic snacks, so try out this spin on the summer treat for International Picnic Day on June 18. Baby red Idaho potatoes are loaded with homemade vegan mayonnaise, relish, mustard, and Worcestershire sauce. Bake immediately at 350°F for 6-8 minutes or store in the fridge until ready to be cooked. Give these taters a light dusting of paprika and top with Tangy Tomato Jam before serving.

Idaho® Potato Doughnut Holes with Salted Caramel Glaze

If you believed potatoes were not suitable as dessert foods, you thought wrong! These Idaho Potato Doughnut Holes with Salted Caramel Glaze are the perfect balance of sweet and salty, and the potatoes give them a delectable airiness in each bite. Cold mashed potatoes are combined with sugar, shortening, eggs, cooled milk, yeast, water, salt, lemon zest and flour. Fry at 375°F and dip into homemade salted caramel glaze.

Q: With warmer weather just around the corner, do you have any tips for picnic potato salads?

A: Nearly every family has a favorite potato salad, so why not make two versions? That way the group that fully expects to be served “Mom’s Potato Salad” can be satisfied and the group that would like to try something different will start a new tradition. We’ve got plenty of recipes for interesting variations on the typical family favorite that add a small twist or two. We also have non-mayo-based potato salad recipes that are terrific.
