Stay Healthy During American Heart Month with Idaho Potatoes

Idaho® Potato Heart-Healthy Soup

To prepare this one-pot, heart-healthy soup, add olive oil and chopped onions to a pan and cook for 20 minutes. Once browned, add potatoes, dried tomatoes, and broth, boiling until potatoes are fork tender, around 10 minutes. Shredded turkey and the vegetables of your choosing are then added into the mix and boiled for another 6 minutes to let the flavors mingle with everyone. Top with freshly cracked black pepper and any other toppings of your choosing. Serve while hot and enjoy!

Q: If my potatoes are soft what is the best way to cook them?​

A: If your potatoes are already soft, they may not hold up well in certain cooking methods that require firm potatoes, like roasting or frying. However, there are still several ways you can use soft potatoes: mashed potatoes, potato soup, potato casserole, potato pancakes, potato salad, and potato gnocchi.
