This month’s featured Idaho® potato farmer is Klaren Koompin from American Falls, Idaho. Klaren and his wife Cheryl have two grown children, Kael and Kamren; Kamren and his wife Brianna have one daughter, Kwin. Klaren is a third generation farmer and loves that he is able to grow a food that feeds the world, and he enjoys the healthy outdoor lifestyle farming provides. His favorite ways to eat potatoes are baked with olive oil and salt and in the form of McDonald's french fries.

Basic Hassleback Idaho® Potatoes
In about a minute, food blogger Lisa Lin demonstrates how to make an all-time classic potato dish, Basic Hassleback Idaho® Potatoes. If you've ever wondered how to perfectly cut the spuds accordion-style, grab a knife and tune in! After the potatoes are sliced, submerge them in ice water with a squeeze of lemon to keep them from browning. Brush the potatoes with an herbed butter and bake at 400°F for an hour. When they're finished, add a little more melted butter with a pinch of salt and freshly chopped parsley or other dried herbs before serving. Want to make them a little more decadent? Add cheese and crumbled bacon to the folds for a truly spud-tacular meal experience!

Q: How long can home fries stay out at room temperature and still be safe to eat?
A: Cooked home fries should be discarded after two hours if left out at room temperature as bacteria begin to grow rapidly when perishable food items are not refrigerated in a timely manner.
