I cut too many potatoes how long can they be kept in the refrigerator covered?

Once peel, did the potatoes get placed in a bowl of water to cover completely? Did you add a little concentrated lemon juice or white wine vinegar to the water to acidify the water to help the potatoes from turning gray when exposed to air? If yes on both, the potatoes should be good or a day or two.
